Simple egg dishes are loved around the world, and I think simplicity is the key to creating the perfect recipe. This Chinese tomato egg stir fry brings in simplicity and deliciousness to one dish. A beautiful stir fry loaded with vibrant tomatoes, fluffy eggs and simple Asian sauces. Absolutely an egg lovers’ delight!
How To Make Chinese Tomato Egg Stir Fry
Step 1 – Scramble the eggs. Before adding eggs to the pan, I like to lightly whisk them with a little water. The addition of water makes them super fluffy and delicious. Add the whisked eggs to a lightly oiled hot pan and move it gently to create extra fluffy scrambled eggs. Transfer this to a plate. Step 2 – Cook the tomatoes in the same pan. Lightly oil the pan, and fry chopped garlic and scallions or spring onions. Make sure you only use the white part of the spring onions. I have used 2 large tomatoes roughly sliced into thick wedges. Sauté this for about a minute or two until the tomatoes are wilted and cooked. Step 3 – Add the seasonings. You will need oyster sauce and sesame oil alongside a touch of sugar, salt and ground white pepper. Sauté for another minute just to incorporate the flavors into the tomatoes. Step 4 – Stir in scrambled eggs and garnish. This step needs to be super quick. And finally, garnish with plenty of spring onions.
