If you’ve ever baked with coconut flour, you know what a magical ingredient it is. A little goes a long way, and it adds an incredibly light and cakey texture to bread, cookies, you name it. I’ve been using coconut flour in my recipes for years, and since it’s such a versatile powder, I decided to round up my (and your) favorite coconut flour recipes.
Why I love using coconut flour
High protein, high fiber, and low carb. It’s basically the unicorn of alternative flour (no offense, almond flour!). Diet-friendly. Without even trying, it’s a fantastic keto and gluten-free flour swap. Naturally cakey texture. Using coconut flour in place of other flours gives any baked good a gorgeous crumb and tender, cake-like texture. No coconut flavor. This may be hard to believe, considering it’s literally made out of coconuts, but yes, you won’t be able to taste the coconut flavor at all.
Breakfast recipes using coconut flour
Nothing gets me out of bed faster than the promise of fluffy pancakes, and if I can have said pancakes with an added fiber and protein boost, I’m all for it. The short answer is it depends. Because coconut flour soaks up a lot of moisture compared to regular flour, it can’t be substituted equally. Use ¼ cup of coconut flour for every 1 cup of all-purpose flour, or look for recipes that specifically use coconut flour.
Coconut flour biscuits– Made with zero grains or butter, you can make them sweet OR savory. The bacon cheese biscuits are my favorite! Coconut flour crepes– If you ever thought making crepes from scratch was hard, this recipe will convince you otherwise. Coconut flour muffins– By far one of my most-requested muffin recipes! Coconut flour banana bread– Moist, fluffy, and made in one bowl, this is the perfect recipe for using up those browning bananas hidden in the corner of your kitchen. Coconut flour banana pancakes– Trust me, no one (literally) will be able to guess these are anything other than old fashioned banana pancakes. Coconut flour pancakes– I make these pancakes more than any other of my pancake recipes, which is really saying something!
Coconut flour no-bake desserts
I love using coconut flour in no bake desserts because it adds an irreplaceable cakey, fluffy texture that gives the illusion of being baked, all without an oven in sight.
Millionaire shortbread– Featuring layers of buttery shortbread crust, gooey caramel, and melted chocolate, these bars are legit the best thing you’ll make all week. Almond butter balls– I just finished a batch of these the other day, and I’m already dying to make more! Nutella bites– Made with homemade Nutella and chocolate chips, a little coconut flour gives these brownie bites the perfect texture. Healthy Snickers– Chewy nougat, crunchy nuts, caramel, and a thick coating of melted chocolate–you’ll never buy the OG Snickers again.
Baking with coconut flour
Baking with coconut flour is easier than you might think. As long as you account for the added liquid, you’re guaranteed light and fluffy treats. So, grab a cookie scoop and baking sheet, and let’s get to baking!
Coconut flour cake– With coconut flour, coconut extract, and a creamy vanilla coconut frosting, this cake pulls no punches with coconut flavor. Coconut flour cookies– When I need a foolproof, gluten-free cookie recipe that doesn’t require a bunch of niche ingredients, I make these chocolate chip cookies. Coconut flour bread– Light, bouncy, and fluffy, this is an easy bread recipe that doesn’t require yeast, kneading, or fancy kitchen gadgets. Coconut flour brownies– I don’t need an excuse to make brownies, but when they’re this easy and decadent, well, that’s two reasons! Coconut flour chocolate cake– A dairy-free, gluten-free, AND refined sugar-free cake that’s layered with rich chocolate flavor. It’s a no-brainer! Coconut flour peanut butter cookies– Made with four ingredients, these cookies have the perfect balance of sweet maple and peanut butter flavor. Paleo pizza crust– I use egg whites, coconut flour, baking powder, and a few spices to make a light and fluffy pizza dough that satisfies a variety of dietary needs.
Keto recipes using coconut flour
Just between us, coconut flour is my preferred choice for keto recipes. It’s cheap, easy to find, and super low in carbohydrates.
Keto no bake cookies– One bowl, three ingredients, and five minutes are all you need to get these decadent no-bake cookies on the table. Keto waffles– With the perfect flavor, 2 grams of net carbs, and 60 calories each, these waffles tick all the boxes. Keto cereal– Thankfully, being keto doesn’t mean I must say goodbye to my favorite childhood treats. In this case, a massive bowl of cereal!
