There’s no question that juicy yellow mangoes are summer’s favorite fruits. And the best part? They taste amazing in so many sweet dishes from simple grilled mangoes to lip-smacking ice creams. So, if you’re a mango lover like me, I have an amazingly delicious recipe to share with you today. This mango burfi or fudge is made with three main ingredients – fresh mangoes, milk powder and condensed milk. Here, the bright sweet flavor of the fudge is enhanced with a light touch of ground cardamom and ghee. Together, they create a sweet treat as summery as your favorite fruit.
Let’s make this summery mango burfi
Start with mangoes. You’ll need perfectly ripe mangoes, just peel and dice to make a smooth purée. I really love the taste of Kensington pride mangoes in this burfi recipe. But, feel free to use your favorite, just make sure they are very sweet with beautiful yellow color. That way, the burfi will get a natural yellow hue without adding any artificial colors. Bring together milk powder and condensed milk in a saucepan over low heat and cook until you get a thick paste. To this, add mango purée, ground cardamom and ghee. Continue cooking until the mixture turns thick and starts to leave the sides of the pan. Make sure you stir occasionally to prevent it from burning. Now, you’ll need to transfer this mango burfi mixture to a rectangular or square dish to set. With the addition of toasted almond flakes, you have two options – you can either add it now or after cutting them into slices. An amazingly sweet slice that not only uses seasonal produce but is also effortless to make.

Cook, stirring, for about 5 minutes or until it gets a semi solid consistency. Add mango purée, ghee and ground cardamom. Cook, stirring, for about 5-10 minutes or until the mixture is very thick and starts to leave the sides of the pan.Grease and line a slice pan or plastic container with baking paper. Make sure the paper is overhanging at the sides. Pour the mixture into the container. Using a spatula, smooth the top.Place in the refrigerator for about an hour to set.
