After a long day, the last thing I want to think about is making dinner. Especially if I have to worry about sticking to my diet.  To keep myself accountable, I’ve spent years cultivating a list of easy, foolproof keto dinner recipes. Each is fast and uncomplicated yet full of familiar flavors. Like with my keto lunch recipes and keto breakfast recipes, I’ve decided to compile a list of my favorite dinner recipes. 

Keto chicken recipes

Chicken is one of my favorite proteins to cook because it’s lean, high protein, and cooks really quickly. Each of these recipes are comforting, fast, and won’t make you feel like you’re on a ‘diet.’

Plan a menu in advance. Meal prep doesn’t sound exciting, but it’s the best way to make sure you have the proper ingredients. I like to go shopping on Sunday afternoon; that way, I know I’m set for the week.  Buy protein in bulk and freeze it. Buying in bulk is cheaper, and most proteins freeze easily. If you know you’re making keto meatloaf, pull out a container of frozen ground beef in the morning and it’ll be thawed by the time you’re home! Keep classic staples on hand. Think of your typical keto ingredients like almond flour, keto maple syrup, keto spaghetti sauce, etc.. These are essential, especially if you’re modifying a favorite non-keto recipe. 

Keto fried chicken– Crispy, crunchy, moist, and juicy, it’s no wonder why this is one of my favorite recipes for chicken thighs.  Keto chicken soup– An easy one pot recipe made with juicy chicken breasts and tender veggies simmering in an aromatic broth. Make sure to add a squeeze of lemon juice–it makes all the difference! Keto crack chicken– Chicken, bacon, TWO kinds of cheese, and ranch dressing…what sounds diet-y about that?  Keto chicken parmesan– Chicken breasts dredged in almond flour and lightly pan-fried, then layered with marinara sauce and parmesan cheese. It’s hard to believe you get all that for only 2 grams of net carbs.  Butter chicken– If you love Indian food but find it to be intimidating, you’re going to adore this recipe. It’s ready in under 20 minutes and tastes better than takeout! Chicken lettuce wraps– You won’t miss the carbs with these juicy, Asian-infused chicken wraps. If you store the chicken separately from the lettuce, the leftovers make a great lunch.

Easy weeknight dinner recipes

These handful of easy keto dinner recipes are my go-to’s when I need a foolproof recipe to whip up on a moment’s notice. Each is ready in 20 minutes or less, and most are made in one pot or skillet, meaning cleanup is a breeze!

Keto stir fry– I repeatedly turn to this stir fry recipe because it’s fast and easy, and most of the ingredients can be substituted depending on what I have on hand.  Keto jambalaya– Made with juicy shrimp, tender vegetables, Andouille sausage, and a rich, aromatic gravy, you won’t even miss the rice.  Keto stuffed bell peppers– This is the perfect recipe for convincing the little ones to eat their veggies. Read my tips on using the Instant Pot or air fryer methods! Keto pizza– Yes, you read that right. You don’t have to bid adieu to pizza on a keto diet, so long as you use keto pizza sauce and keto pizza crust.  Keto pork chops– Tender, juicy pork chops enveloped in a sweet and savory glaze, all for 1 gram of net carbs.  Keto salmon– I know salmon can be a bit intimidating to cook but trust me, this recipe couldn’t be simpler to make. You’re guaranteed flaky, buttery soft fish every time. 

Comfort foods and casseroles

Most people assume being keto means sacrificing our favorite dishes, but I beg to differ. Each of these hearty casseroles and comfort food classics tastes as if there’s nothing missing–because there isn’t!

Keto cheeseburger casserole– All the best parts of cheeseburgers but with keto macaroni instead. The hardest part is picking your favorite burger toppings! Keto pizza casserole– It’s all the best parts of pizza baked in one dish and topped with your favorite pizza toppings.  Keto beef stew– Nothing says comfort food quite like a warm, hearty beef stew. By swapping the potatoes for jicama, you now have a zero-carb dinner! Keto shepherd’s pie– Layers of creamy mashed cauliflower and juicy meat gravy, all topped with a crisp parmesan crust. I’m getting hungry just thinking about it.  Keto taco casserole– I love keto tacos as much as the next guy, but if I can cut to the chase with a massive, cheesy taco casserole instead, I’m all for it.  Keto chicken casserole– Featuring juicy chicken with tender onions, garlic, and vegetables baked in a cheesy sauce. It doesn’t get more decadent than that!

Keto Asian recipes

We cook a lot of Asian recipes in my house because they’re easy to craft into the perfect keto meal without compromising on flavor.

Keto egg roll in a bowl– Let’s be real: The egg roll wrappers are the LEAST exciting part about egg rolls. So, I created a recipe that skips them altogether.  Keto ramen– Chewy, low-carb ramen noodles swimming in an umami broth with your favorite veggies. It’s SO much healthier for you than instant ramen! Keto orange chicken– Tender pieces of chicken pan-fried and coated in a sweet and sticky orange sauce–this recipe leaves no room for wanting.  Keto sushi– If you’ve been dying to bring sushi back into your life since going keto, this recipe is for you. Made with nori sheets, cauliflower rice, and fresh seafood, it’s better (and healthier) than takeout.  Keto beef and broccoli– The sauce in this recipe alone is good enough to bottle, and when you pour it over tender broccoli and juicy flank steak, it’s irresistible.  Cauliflower fried rice– Fried rice is a classic Asian staple, but if rice is out of the question, this cauliflower version is the next best thing. 

Keto Italian recipes

Pasta? Gnocchi? Meatballs? No problem! With a few simple swaps, you can re-imagine your favorite Italian recipes into low-carb, high-protein dishes. Even your non-keto friends will be asking for seconds!

Keto meatballs– Pair these with almond flour pasta, keto pasta, and keto garlic bread, and you’ve got a meal the whole family is sure to love. Not a fan of beef and pork meatballs? Make my ground chicken meatballs or lamb meatballs instead and use keto breadcrumbs! Keto eggplant parmesan– Eggplant parmesan is perhaps my favorite dish to order at Italian restaurants, but they’re usually coated in bread crumbs. I use keto bread crumbs instead, which I now actually prefer over regular bread crumbs.   Keto lasagna– If you thought you’d never get to experience lasagna since going keto, think again. I use low-carb lasagna noodles but keep the melty mozzarella cheese and savory meat sauce.  Keto gnocchi– My mom taught me how to make gnocchi with cauliflower, and it’s remained a staple in my house ever since.  Keto beef stroganoff– Tender sirloin simmered in a thick and creamy sauce with caramelized mushrooms, all for the low, low cost of 3 grams of net carbs.  Zucchini lasagna– Swap the pasta sheets for tender zucchini noodles, and you’ve got a low-calorie, low-carb, high-protein dinner waiting to happen.
