The filling – Consisting of potatoes and green peas laced with spices, the filling is encased in the puff pastry to make the pastries. Start with boiling the potatoes with a little salt. The cooked potatoes need to be added to a sautéed mixture of green peas, ginger, green chilies and spices. The spices include a combination of ground turmeric, ground cumin, ground coriander and chat masala. The chat masala, that can be substituted with amchur powder, is one of the key spice mixes you’ll need to add so much flavor and taste to this dish. Finally, add a handful of chopped coriander (cilantro) leaves. Let this mixture cool slightly before adding to the pastry sheets. Assemble the pastries – You can cut the pastry sheets anyway you like, squares or rectangles. Just add the filling and seal the pastries. Depending on your dietary preferences, you can brush the pastries with milk or whisked egg. You can bake these pastries for about 20 minutes until they are golden.
