Avocados: here’s the most important part! Make sure your avocados are ripe but still firm. You don’t want mushy avocados, because they don’t hold up to the breading process. Flour: you can use any type, even gluten free Panko: you can find gluten-free panko online if necessary Spices: oregano, garlic powder, and chili powder Salt Lime juice Olive oil
Lightly coat the avocado slices in flour and spices. This allows the next ingredients adhere to the slices instead of sliding off. Dip the slices in oil and lime juice. This provides the liquid for the breading to stick. Coat the slices in panko. Then dip the avocado slices into panko. The panko will get gummy from the flour and oil, so refresh as needed. Continue to replenish with fresh panko to get that lovely crispy exterior. Bake for 15 minutes at 425 degrees. You don’t even need to flip!
