Ever since I was introduced to these sweet puffs, I really wanted to create a homemade version. Puffs are usually made with savory filling consisting of egg, vegetables, chicken or meat. So, these banana puffs obviously captivated my attention. With a few trials and errors, I think I’ve created the most delicious version of the banana filling of the store bought puffs. And honestly, these puffs turned out to be super awesome. Ok, coming to this banana puffs recipe, first, let’s make the filling. Like the savory chicken and egg puffs, you’ll need to cook the filling separately before covering it in puff pastry sheets. Of course, the key ingredient in these puffs are bananas. Ghee is one of the super flavorful ingredients in this banana filling. I love the aroma of ghee in homemade dishes. And in this recipe, banana caramelized in ghee takes this dish to a whole new level. It’s incredibly delicious! So, heat up a little ghee, and fry a few raisins or cashew nuts. Stir in bananas, and let it caramelize in ghee. Once the bananas are caramelized, you’ll also need to add in grated coconut, and give it a quick stir fry. Depending on the sweetness of the banana, add in some sugar or even jaggery. If you’re after a healthier option, try coconut sugar. Stir in some cardamom powder before you turn off the flame. Cool completely. Now, place this banana filling on the pastry rectangles, and brush with beaten egg. Finally, bake them, and dust generously with icing sugar to make them super sweet.
