What is cauliflower rice?
You might be very familiar with this low carb version of regular rice – rice made from cauliflower. Although it’s easily available from the frozen aisle of your local supermarket, trust me, it’s super easy to make at home. Just chop the cauliflower, place it in the grinder, and pulse a few times to convert them into coarse grains. Make sure you don’t grind it too long, the rice will become soggy. And done! You’re free to adjust the sauces and veggies to your taste, but remember they’re are the key tastemakers in this recipe. In short, it’s the kind of dish you can make with ingredients you have on hand. Speaking of the simple technique to make this fried rice extra delicious, make sure you have everything ready before you start. Start with sautéing garlic in a little oil followed by veggies. I opted for whites of spring onions (scallions), carrots and green peas. Once the veggies are crisp tender, stir fry the cauliflower rice alongside a little soy sauce and sesame oil. And you have the very basic cauliflower fried rice. Now, depending on your personal preference, you can play around with the ingredients, and add your own customized touch with shrimp and chicken. This is one amazing fried rice featuring the deliciousness of cauliflower. Believe me, you’ll never go back to store-bought cauliflower rice again.

Place florets (in batches) in the food processor. Pulse until the mixture resembles couscous. Set aside.Heat 2 teaspoons oil in a large wok or frying pan over high heat. Add eggs, and cook until scrambled, stirring occasionally. Remove egg from the pan and transfer to a plate.Add 1 tablespoon oil to the same pan.
