A loaded sandwich is simply one of the best ways to level up a flavor packed lunch. I really enjoy a great sandwich with layers of contrasting flavors between crisp buttered bread slices. Well, there are plenty of varieties of sandwiches, both classic and modern. And they never fail to bring in all kinds of flavor combinations to satisfy your taste buds. Chicken junglee sandwich. A spiced version of your favorite chicken mayo sandwich. The vegetarian counterpart of this sandwich is a popular Indian street food and it’s loaded with veggies like bell peppers (capsicum), corn, onions, tomatoes, and grated paneer. We are going to add some boiled shredded chicken to the mix to create a protein packed sandwich. 

Chicken Junglee Sandwich Recipe

First, let’s make the filling for this sandwich. It basically consists of two layers  – one with chicken mayo mixture and the other with sliced veggies.  To make the chicken mayo mixture, all you need to do is combine boiled and shredded chicken with corn kernels, bell peppers and onion. To spice up the mixture, you can add a little schezwan sauce and chat masala. Chat masala is the key ingredient that adds the much needed spices to the sandwich.  Next, butter the bread slices and spread with a generous amount of green chutney. Choose your favorite white, wholemeal or multigrain bread. I decided to go with the multigrain version. With the green chutney, go with either homemade or store bought. Top one bread slice with chicken mayo mixture and another bread slice. Now, the second layer of chicken junglee sandwich – sliced cucumbers, onions and tomatoes. Don’t forget to sprinkle generously with chat masala. Top with the third bread slice. Finally, toast. You can always toast the bread in a sandwich maker or grill. But I prefer a pan with loads of butter. Once both sides are crisp and brown, slice and serve with potato chips or French fries.
