I thought I’d start this week off with a fancier version of an all-time favorite Indian classic. Whether it’s winter or summer, it’s something I love to make throughout the year. So, as most of you are enjoying the summer sunshine, I think this is the best way to celebrate the grilling season. I know you’re very familiar with chicken tikka. How about making it a bit more delicious with the addition of colorful veggies? Sounds so good! I must admit, I really love vegetables. Most of all, I love the vibrant touch they add to plain chicken tikka kebab. And I want to add more nutrition boost to these kebabs with the delicious avocado yogurt dip. I’m a huge avocado fan. Believe me, the flavor combo of chicken and avocado dip is out of this world. Usually, I make my favorite mint chutney to go with the kebabs. But this time, I replaced mint with avocados, and it’s exceptionally tasty. Making chicken tikka kebab is a two step process. I just followed the recipe for chicken tikka on the blog. In the final stage of preparation, I threaded a few squares of bell peppers (capsicum) and onions to make it more interesting. Simple as that! As I mentioned, it’s just my favorite chicken tikka with a few extra delicious additions. Once you’ve threaded the chicken and veggies onto the skewers, grill them to perfection. Just a few minutes is all that’s required! Without a doubt, chicken tikka kebab make for the perfect summer grilling recipe apt to feed a crowd. The best thing is you can marinate the chicken and thread them onto skewers ahead of time. So, when the party kicks in, just pop them on the grill. I totally love a generous drizzle of the creamy dip on the kebabs.
