Is it a cookie? Is it a cake? Well, it’s both. This cookie cake is the perfect amalgamation of the beautiful texture of both cookies and cakes. Very rich and chewy in the center with crisp edges. Best part? It’s loaded with chocolate, and the extra addition of chocolate chips makes it super chocolatey and heavenly.

This recipe is actually inspired by my favorite chocolate cookie. I just added to a few tweaks to turn it into a cake. Traditionally, cookies are made with a perfect combination of flour, eggs and butter as the main ingredients. But as I mentioned, I’m going to slightly tweak the recipe and make this cookie cake with egg yolks. Yes, you’ll only need egg yolks to make this sweet treat. Trust me, it’s the secret to the richness of this cookie cake. Start with beating the yolks at high speed until they’re very pale and slightly thickened. Next up, add in sugar, vanilla extract and vegetable oil. At this stage, you just need to beat them until all the ingredients are combined together. Now, sift in flour, cocoa powder and salt into the yolk mixture. Beat again to combine all the ingredients. Now to the final part of making this chocolate cookie cake. Baking. Press the dough firmly onto the base of a cake tin. For extra decadence, sprinkle plenty of chocolate chips on top. Lightly press them down into the dough. Finally, bake. Decorate cooled chocolate cookie cake any way you like. I opted for a simple whipped cream frosting with a touch of cocoa powder and vibrant berries. A scoop of ice cream will also taste heavenly with this cookie cake. Pure decadent bites of deliciousness!

Add sugar, vegetable oil and vanilla extract. Beat again until just combined for about 1 minute. Sift flour, cocoa powder and salt into the bowl. Beat until just combined.Transfer dough to the cake tin. Press down firmly into the cake tin. Smooth top. Sprinkle with chocolate chips. Press them down into the dough gently. Bake for about 20-25 minutes.Remove cookie cake from the tin and leave to cool completely on a wire rack. Decorate.
