Creamy Curry Pasta Recipe

Cook pasta – Use your favorite pasta in this recipe. Boil them in salted water until just tender. Once cooked, do not forget to reserve a little pasta water.  Make creamy curry sauce – While the pasta is cooking, you can whip up the sauce. Start with sauteing shallots in a little olive oil. When it turns soft and translucent, fry chopped garlic and curry paste. I have opted for red curry paste in this recipe, but feel free to choose your favorite.  Cook this mixture for about 3 minutes. The curry paste will be ready when it’s fragrant and gets a darker color. To this sauce, stir in unsweetened coconut milk and then season with a little salt and pepper. Give it a toss and cook for 3-4 minutes. Add cooked pasta – Toss the cooked pasta in the sauce. If the sauce is too thick, add a little reserved water. Finally, add a light drizzle of fresh lemon juice. Heat through.
