Ice creams never fail to get me excited just because they’re one of my most favorite ways to celebrate summer. Although we are right in the middle of fall (in Australia), we experienced drastic and unusual weather changes over the past few days bringing in summer vibes. And I found the perfect excuse to whip up this creamy custard ice cream. Imagine your favorite custard with an ice cream makeover. You know, creamy, silky custard with layers of whipped cream and a touch of rainbow sprinkles. A treat for your tastebuds, indeed! All in all, this is a super exciting recipe to make. First, we’ll make the custard and then fold it into the whipped cream. Custard powder is going to be the base of this recipe. If you’re familiar with making custard from custard powder, this custard ice cream recipe will be easy peasy for you. As you know, it’s the easiest way to make homemade custard. So, let’s start with the custard. First, you’ll need to mix custard powder and milk together in a bowl. Make sure you get a lump-free mixture. Next up, boil the milk and dissolve the sugar. Now, add in custard mixture little by little to get smooth, lump-free texture. Make sure you stir continuously to create the perfect custard for this custard ice cream. Continue stirring until you get a thick consistency. The perfect custard will be thick, smooth and silky. You can also add in the flavoring at this stage. I prefer the classic vanilla extract. Play around with different flavors like rose essence, peppermint etc to create your favorite version. Now, let this custard mixture cool down completely before adding it to the whipped cream. Whip the cream until you see soft, fluffy peaks. Then fold in cooled custard. Remember the custard must be cooled down before adding to the cream. Warm custard mixed with chilled cream is a recipe for disaster. Pour the ice cream mixture into a freezable container, and freeze for about 6-8 hours. Scoop out, decorate with sprinkles, and enjoy!

Prep Time 6 hours    Cook Time 10 minutes    Total Time 6 hours 10 minutes      Ingredients   						2 cups + 3 tbsp milk					  						2 tbsp custard powder					  						1/2 cup sugar					  						1/2 tsp vanilla extract					  						1 cup heavy (thickened) cream					     Instructions Combine 3 tbsp milk and custard powder in a bowl to form lump-free mixture. Set aside.Meanwhile heat 2 cups milk in a saucepan over medium-high heat. Bring to the boil. Add sugar. Stir to dissolve.Gradually pour in custard powder mixture. Stir continuously to form lump-free custard. Bring mixture to a simmer over medium-high heat, stirring continuously, for 2 minutes or until the mixture turns thick. Stir in vanilla extract. Remove from heat. Set aside to cool completely.Place cream in a bowl. Using an electric beater, whisk on high speed until medium to stiff peaks form, about 1 minute. Fold in cooled custard in batches.Pour custard ice cream into a container. Cover with cling wrap. Make sure the wrap touches the top of the ice cream mixture. Freeze.Decorate with your favorite toppings.
