But that’s not why we love this recipe! It’s beyond easy, uses a few ingredients that we always have on hand, and makes great clumps (which is harder to achieve with a standard granola recipe). How to make chunky granola: some tips
If you’re like us, you like a little texture in your granola. Chunks, clusters, clumpy granola: whatever you want to call it, it makes eating it much more interesting. Here’s what you need to do:
Press it into an even layer, then bake 10 minutes. Use your fingers to pat it down. Then bake 10 minutes without stirring.Flip, press back together and bake 10 minutes more. We like to use a fish spatula to flip it (sounds weird, but it’s great for scooping!), but you can use any flat spatula. Some pieces should stay together. Then pat it back into an even layer with your fingers. Roll over it with a rolling pin and allow to cool completely. When you remove it from the oven, take a rolling pin and gently roll over it to press it down even further. Then let it cool completely to let the chunks form. Break it apart with your fingers. Break into clumps, whatever size you like!
Mix-ins for peanut butter granola
This peanut butter granola tastes great as is! Of course you can add mix-ins if you prefer. Add these after the granola is fully cooled. We love to keep it simple, but here are a few great ideas:

Vegan variation
