Are you an pumpkin spice fan? (No need to be shy.) It might be cliched, but it’s true: there’s nothing cozier once fall hits than pumpkin spice…anything! Here’s a delicious recipe to channel your pumpkin love that works equally as well in coffee drinks as on pancakes: Pumpkin Spice Syrup! We created it especially for this Pumpkin Spice Coffee, but it’s delicious drizzled on pancakes or oatmeal, too.

How to make pumpkin spice syrup

This pumpkin spice syrup a variation on simple syrup: a liquid sweetener made with equal parts sugar and water. For this variation you’ll use brown sugar, which brings in a deep molasses flavor. Combine that with the cinnamon, ginger and nutmeg in a pumpkin pie spice blend, and the flavor is off the charts! All you have to do is simmer it for a few minutes on the stovetop. Here are the basic steps:

Combine sugar, water, and pumpkin spices. Place ½ cup each brown sugar and water in a small saucepan on the stove. Add 1 teaspoon vanilla extract and 1 tablespoon pumpkin pie spice.Heat until dissolved. Heat over medium heat for 1 to 2 minutes, stirring until fully dissolved. Do not simmer!Strain. Strain through a fine mesh sieve to create a smooth texture. If desired, you can strain it again to remove more of the spices. (We like it strained once for maximum spice flavor.)

Is this similar to Starbucks pumpkin spice syrup?

No! Starbucks Pumpkin Spice Syrup is made with canned pumpkin puree and sweetened condensed milk. It’s what they use to flavor a pumpkin spice latte. If you’re looking to make a pumpkin spice latte, you can simply use those flavors in the drink and skip the condensed milk. Head to these recipes:

Storing homemade pumpkin spice syrup

Store homemade pumpkin spice syrup for up 1 month refrigerated. It’s best stored in a glass bottle for easy pouring, or a glass mason jar. The flavor is best when it’s freshly made, but it’s still delicious towards the end of storage time.

Ways to use it: drinks and more!

How to use this pumpkin spice syrup once you make a batch? We love it in Pumpkin Spice Coffee, which is simply coffee with pumpkin spices. Or, it’s the best quick way to make pancakes taste like pumpkin…without making pumpkin pancakes! Here are some ways to try it:
