Whenever we have pizza or pasta in my house, it’s a safe bet we’ll have garlic breadsticks for the perfect side dish. Honestly, who can resist a pile of crunchy, butter garlic bread sticks? I know I can’t! And since I made these homemade breadsticks with my magic 2-ingredient dough, they’re even more convenient and foolproof.

2-ingredient dough. The base of this recipe is a simple dough made with self-rising flour and Greek yogurt. That means there’s no rising, kneading, or proofing required to get the perfect fluffy breadsticks. Garlic goodness. Like with my garlic pizza, this recipe is for all you garlic lovers out there. You can add as much as your heart desires! Made in 20 minutes. Most of that time is spent letting the breadsticks bake in the oven, so the prep time is minimal. Versatile. I love making these breadsticks on pizza night, but they work equally well alongside creamy soups and stews.

Ingredients needed

These cheesy garlic breadsticks need just 5 ingredients to come together. Here is everything you will need:

Magic dough. To make this dough, you’ll need self-rising flour and Greek yogurt, which can be full-fat, low-fat, or nonfat.  Butter. I used melted unsalted butter, but you could also use good-quality olive oil.  Minced garlic. I highly recommend using fresh minced garlic over bottled garlic or garlic powder. Shredded cheese. Use whatever shredded cheese or dairy-free cheese you’d like. For a more Italian flavor, I’d recommend a mix of mozzarella, cheddar, and parmesan cheese. Mixed herbs. I used an Italian herb blend with rosemary, basil, and oregano.  Salt. To taste.

How to make garlic breadsticks

Step 1- Prep work. Preheat the oven to 350F/180C and line a large baking tray or several small baking sheets with parchment paper.  Step 2- Make the dough. Prepare the 2-ingredient magic dough as directed, then, on a lightly floured surface, shape it into a rough rectangular shape. Transfer the dough to the prepared baking tray. Using a pastry brush, lightly brush the tops of the dough with butter or olive oil to cover the entire pizza dough completely. Step 3- Top the bread. In a small mixing bowl, stir together the melted butter with minced garlic. With the pastry brush, brush the mixture all over the top of the dough, reserving half an inch from each side. Sprinkle with cheese and mixed herbs over the top.  Step 4- Bake. Bake the breadsticks for 15-17 minutes or until golden around the edges and the cheese has melted.  Step 5- Slice and serve. Remove the breadsticks from the oven and sprinkle with more Italian herbs and salt. Using a pizza cutter, slice the loaf into strips.

Recipe tips and variations

Use a stand mixer. This is optional, but sometimes, when I make the dough, I find using a stand mixer with a dough hook attachment makes the process go more smoothly.  Add more garlic. Actually, you can add as much garlic as you’d like, but for every extra tablespoon of garlic, add an extra teaspoon of butter or oil.  Make them vegan. Make my magic dough with coconut Greek yogurt and use olive oil and plant-based cheese. You can also omit the cheese altogether if you prefer.  Wrap in foil. If you notice the breadsticks are turning golden brown before the centers are fully cooked, lightly cover them with foil to prevent burning.  Add plenty of flour to your work surface. Trust me, nothing is a bigger pain than cleaning up a sticky, doughy mess, so add plenty of flour to your surface and dough ball! Serve with sauce. Like marinara sauce, pomodoro sauce, sugo, or hot honey sauce.

Storage instructions

To store: Store leftover garlic sticks in an airtight container in the refrigerator for up to 4-5 days.  To freeze: Wrap cooled leftover bread sticks in foil or plastic wrap and place them in a freezer-safe container. Freeze them for up to 2 months.  To reheat: Reheat the breadsticks in a preheated oven set to 350F for 8-10 minutes or in the air fryer set to 375 for 5-6 minutes. You can also microwave leftover breadsticks, but they won’t crisp up as nicely.
