Ginger dressing is an American salad dressing that contains East Asian ingredients like fresh ginger root, rice vinegar, and honey. Often it also contains soy sauce or sesame seeds. This ginger dressing is a straightforward, fresh and zingy vinaigrette that uses white wine vinegar, Dijon mustard, and honey. But there are a few variations with Asian-inspired flavors using soy sauce or sesame oil (see below)! Here’s what you’ll need for this recipe:

This dressing is a blender salad dressing, which often we try to avoid (since we’re lazy and don’t like cleaning our blender). Here’s why to use your blender in this ginger dressing:

It spreads out the ginger flavor. It makes it more integrated into each spoonful than it would be if it were grated and whisked. It makes a smooth texture. Grated ginger makes little clumps in the texture, but blending makes everything creamy and smooth! If you have a standard blender, double it! You’ll need larger quantities to get it to blend. But if you have a small blender or immersion blender, it works with the quantities in the recipe below.
