Tangy chervre makes gooey, cheesy pockets in the savory eggs, punctuated with the oniony finish of fresh chives. Omelettes are quick to make and once you’ve gotten the hang of it, they’re ideal for breakfast or a fancy brunch, made to order. The goat cheese adds just the right hint of sophistication (but it works for 5 year olds too: we’ve tested on ours!).
Ingredients for a goat cheese omelette
It’s amazing the amount of flavor that comes from a handful of simple ingredients! The earthy flavor of goat cheese adds a unique element to the already irresistible omelette. Here’s what you’ll need:

If you’d like, you can get creative and add additional vegetables: like a few handfuls of sautéed spinach, sautéed mushrooms, etc. Just make sure the vegetables are cooked before adding to the omelette.
Tips for making a goat cheese omelette
This goat cheese omelette uses the American omelette technique, versus the French technique like our Classic Omelette. You’ll cook the eggs a bit longer and make a half-circle shape instead of a roll. As you’ll see in the photo, it can be a little free form! Here are a few notes on the process:
Before you start, read the entire recipe. The cooking process goes fast. Head to the recipe below and take a quick read through before you start. Prep everything before cooking. Have your eggs, cheese and chives all prepped and ready to go before you turn on the heat.In a small 8-inch skillet, cook the eggs 2 minutes until mostly set. The skillet size is important to get the correct-size.Add the goat cheese, then fold in half and cook 1 minute. It’s ok if the top breaks a little: it will stay together once it’s cooked.
Making omelettes for a crowd
Want to make goat cheese omelettes when you’re entertaining? It can be a little daunting to whip them up to order, so here are a few tips for the process:
Whisk up a big bowl of all the servings of eggs. Add approximately 6 tablespoons of the eggs to the skillet for each omelette. That’s a scant ½ cup or a little over ⅓ cup.Keep the cooked omelettes warm in a 200 degree oven while you make the other omelettes. Place them on a greased or parchment-lined baking sheet.
Serve them with a simple green salad, hash browns or home fries, and healthy banana muffins for a tasty brunch! And don’t forget the mimosas.
