What makes grilled chicken absolutely lip-smacking? Well, I’d say, the ingredients going into the marinade. What do you think? How about a gorgeous side dish that literally accentuates the flavor of grilled chicken? Stunner dinner sorted without much fuss. Cool, right? Recently, I’ve been looking for recipes that can fit into my busy schedule. Making elaborate dinner has become nearly impossible these days. Moreover, I wanted a kid friendly recipe that’s not too spicy. Enter these Vietnamese grilled chicken wings. It brings the classic flavors of Vietnamese food which is actually less spicy compared to Indian food. Brown sugar makes it slightly sweet, and, I must tell you, I really love it. In fact, I’m pleasantly surprised by the perfect balance of sweet and salt in this recipe. Fish sauce is a key ingredient used in Vietnamese cuisine. A little fish sauce will flavor the whole dish. And it doesn’t smell fishy. So don’t be scared to use it. Black pepper is yet another important part of this recipe. It’s the only ingredient that delivers a spice kick. If you want to spice up this dish more, add crushed dried red chilies. I was thinking about using chicken breast or thigh fillets in this recipe and turn them into skewers. But on second thought, I settled on wings which, as you know, will turn juicy and tender on the grill. The grilled chicken is a perfect match with the Asian slaw or Vietnamese style coleslaw. To be very exact, match made in heaven. The dressing for the salad is also very similar to the chicken marinade. Again, classic Vietnamese flavors going on here. While these Vietnamese chicken wings served with Asian slaw is bound to make everyone at the dinner table happy, I’ve got another exciting idea for you. Shred the chicken, discard bones and skin, and then roll them in wraps, along with the salad of course. Believe me, these are awesome. Learn how to make these wings and enjoy them with your friends and family.

Prepare the wings by removing the tip and then cutting them in half. Remember to rinse them well and pat dry. Now you can make the marinade by mixing together turmeric, brown sugar, fish sauce, black pepper, garlic, lime juice, oil and enough salt. Coat chicken really well in the marinade. Set aside for 1 hour or overnight. When chicken is ready to cook, preheat grill and arrange wings on the grill (as you see in the picture). Grill for 20-25 minutes. Turn occasionally to ensure both sides turn brown evenly.

For the slaw, it’s important that you cut all the veggies as thin as possible. To make the dressing, add all the dressing ingredients – sugar, vinegar, fish sauce and sweet chili sauce – to a small jar. Close the lid and shake really well. Pour it over the veggies and mix well. If you have time, set it aside for 10 minutes to develop the flavors. Garnish with mint leaves. Serve Vietnamese chicken wings with Asian slaw.

Prep Time 10 minutes    Cook Time 25 minutes    Total Time 35 minutes      Ingredients Marinade:   						½ cup brown sugar					  						2 tsp minced garlic					  						1 tbsp lime juice					  						1 tsp ground turmeric					  						2 tbsp fish sauce					  						2 tbsp ground black pepper					  						1 tbsp oil					  						Salt to taste					  Vietnamese Chicken:   						1 kg chicken wings					  Asian Slaw Dressing:   						2 tbsp rice wine vinegar					  						2 tsp caster (granulated) sugar					  						2 tbsp fish sauce					  						1 tsp sweet chili sauce					  Asian Slaw Veggies:   						4 cups shredded vegetables (cabbage, carrot and spring onions)					  						2 cm piece fresh ginger, cut into sticks					  						2 garlic cloves, cut into sticks					  						Mint leaves, to garnish					     Instructions Vietnamese Chicken:Remove the tip of the chicken wings and discard. Separate the wings into two pieces. Rinse well under cold running water. Pat dry with a paper towel.Combine together brown sugar, garlic, lime juice, turmeric, fish sauce, black pepper and oil in a large bowl. Season with salt. Set aside.Add chicken to the bowl, and coat well with the sauce. Marinate in the refrigerator for at least 1 hour or overnight if possible.When chicken is ready to cook, preheat grill.Arrange the wings over the grill in one layer. Grill, turning occasionally, for 20-25 minutes or until chicken is cooked through.Asian Slaw:To make the slaw, place the shredded veggies in a large bowl.To make the dressing, place rice wine vinegar, sugar, fish sauce and sweet chili sauce in a small jar with lid. Shake well for a minute or two or until all the ingredients are well combined.Pour dressing over the veggies. Mix well. Set aside for 10 minutes to develop the flavors. Garnish with mint leaves.Serve grilled chicken with slaw and/or jasmine rice.
