Other types of canned tomatoes taste bitter. Fire roasted tomatoes have become widely available in the US, made by several different brands. Make sure to check the ingredients of the brand of sausage that you buy: some brands are still very processed. Also make sure that it meets your dietary needs: some brands contain gluten or eggs.
