The secret to making crispy banana chips lies in the type of banana used and the timing. These chips which are very popular in Kerala are made using thinly sliced raw plantain. And when I say “raw”, the color of skin should be very green. Otherwise, you will not get the desired result. In this recipe, I have used raw large bananas as plantains are not available here in Australia. But, you don’t have to compromise on the crispiness of the chips as long as you follow the instructions carefully. More Kerala Snacks:

 Yield: 2 cups Kerala Banana Chips         			Print		    Very crunchy chips all the the way from Kerala. You won't be able to stop munching!     Prep Time 10 minutes    Cook Time 20 minutes    Additional Time 10 minutes    Total Time 40 minutes      Ingredients   						2 large bananas, peeled					  						½ tsp ground turmeric					  						3 tbsp water					  						1 cup oil					     Instructions Method ICombine ground turmeric and water. Keep aside.Peel the bananas, and soak them in turmeric water for 10-15 minutes. Then, pat dry with a paper towel, and slice them into thin circles.Heat oil in a pan, add the banana slices and cook them in batches. When done, drain on a paper towel.Method IICombine ground turmeric and water. Keep aside.Slice the bananas into thin circles.Heat oil in a deep pan. Add the banana slices in batches, and try not to overcrowd the pan. When they are almost done, add a few teaspoons of turmeric water into the oil. You need to be very careful at this stage as the oil will start to splutter. You will also hear a sizzling sound. The chips will be ready when the sizzling sound stops. Remove the banana chips from oil, and drain them on a paper towel.   Notes  Use a mandolin slicer to make the slicing process easierAlways remember to remove the chips from oil before it turns brown.You can make them in large batches, cool, and store in an airtight container.
