Alex and I love trying our hand at healthy desserts. While we’re not quite sure how exactly to apply the words “healthy” and “natural” sometimes, they at least denote an attempt to think outside the box! In this case, it means gluten-free, vegan, and refined-sugar-free: but it works for eaters of all kinds! This is one of those foods better not from a box – pudding! And this mint chocolate tofu pudding could not be more delicious or easier to make at home. Keep reading for the recipe!
How to make tofu pudding
Our friend and taste tester for this tofu pudding was a little wary at first. Tofu pudding? Sounds a little odd, we know. But after tasting it, the first bite made her a believer! It’s truly easy to make this mint chocolate tofu pudding: it takes only 5 minutes of hands on time. The main item of importance when buying ingredients is to make sure you pick up a soft tofu (not firm)! The soft tofu is what makes for the creamy texture; firm tofu is what you would use when cooking it up for a something like a stir fry (or these tofu tacos). Once you have your soft tofu, all you need is cocoa powder, maple syrup, and mint extract. These are ingredients that are always on hand in our pantry, and we’d guess they’re in yours too! Give them a whiz in a food processor for a few minutes. The resulting texture will look just like pudding! The last step in making this tofu pudding is giving it a good chill. After you blend it, you’ll notice the texture is pretty runny. Pour it into glasses or bowls, and pop it into the refrigerator for at least 30 minutes to let it set. After setting, the texture will be much closer to a mousse or pudding. Would you try tofu pudding? We found that we enjoyed it just as much as a standard chocolate pudding — though if your tastebuds are used to high sugar content or a certain brand, we can’t make any promises! Is tofu healthy?
Do you eat tofu and soy products? Lately, media has been giving some mixed messaging about whether tofu is healthy. From what we’ve read, the issue is with relying too heavily on processed soy for protein in a vegetarian or vegan diet. It’s recommended to find organic tofu (or non GMO tofu) where possible. Eating tofu in moderation is part of a healthy diet!
