While I was going through my recent posts, I noticed that I haven’t posted a South Indian recipe for a very long time. So, I thought this time I’ll post one of my favorites – mushroom stir fried with desiccated coconut and spices. I’m a big fan of stir fries, and always try to add at least one dish to my everyday menu. As I write this, several stir fry ideas are popping up in my mind – I think it’s time to add one more category to my recipe list. Yield: 2 Mushroom and Coconut Stir Fry | Mushroom Thoran Print Mushrooms stir fried with coconut and spices. Prep Time 5 minutes Cook Time 10 minutes Total Time 15 minutes Ingredients 200g button mushrooms, diced 2 small garlic cloves, chopped 2 shallots, chopped 1/3 cup desiccated coconut 1 green chili, finely chopped ½ tsp ground turmeric 1 sprig of curry leaves ½ tsp mustard seeds 1 tbsp oil Salt to taste Instructions Heat oil in a frying pan over medium-high heat. Splutter mustard seeds. Add shallots. Saute for 2 minutes or until light brown.Add garlic, curry leaves and green chili. Saute, stirring, for another 2 minutes. Add coconut and ground turmeric. Saute for a minute.Stir in mushrooms. Season with salt. Cook, stirring occasionally, for 5-6 minutes or until mushrooms turn soft.
