The standard method uses a skillet and comes out beautifully crispy. But here’s the thing: you can only make 1 pound of potatoes at once. You also need to watch the pan carefully during the booking process. So why not make Oven Hash Browns? This method is easy, hands off, and you can make double the potatoes: perfect for a crowd or just larger servings. They come out unbelievably crispy and salted to perfection!
Ingredients in oven hash browns
The ingredients for oven hash browns are ultra simple. In fact, all you need are 3 ingredients, outside of salt and pepper. Here’s what you need:
Russet potatoes: The type of potato is important here! Make sure to use russet potatoes (or another starchy potato variety). They crisp up just right and have the expected hash brown flavor. Olive oilGarlic powderKosher salt & black pepper
Tip: quick soak the potatoes before baking
Here’s a trick to making the very best oven hash browns: soak the potatoes! We use this trick in our Perfect Seasoned Fries and Homemade French Fries. It gets just the right texture to the potatoes so they don’t come out mushy. Soak them in a bowl of cold water for just 2 minutes before you pop them into the oven. Tip: Make sure to drain and dry them completely before cooking! You don’t want any residual moisture in the potatoes, which will make them soggy. More details are in the recipe below.
Bake the oven hash browns…without stirring!
Another trick for oven hash browns: you don’t even need to stir them in the oven! It’s not only easier, but it results in super crispy hash browns. There are two ways you can prepare your baking sheet for the hash browns before baking:
Brush oil onto the baking sheet. This results in the crispiest hash browns! While it seems like they might stick to the sheet, once they’re fully oven baked they become so crispy that they peel right off. Use parchment paper. You can also line the sheet with parchment paper: this makes for easy cleanup! The hash browns will still get very crispy. Do not use a silicone baking mat! These types of mats tend to make vegetables soggy. Avoid using them!
How to make double the recipe for a crowd
Are you serving a big crowd? You can make double the recipe of these oven hash browns. But it’s not as easy as just doubling the recipe. There are two important things you should know:
Switch the baking sheets on the racks halfway through baking. Not sure about you, but our oven is pretty uneven. The bottom rack cooks much faster than the top. Place the baking sheets on the reverse racks halfway through to combat this. Bake for longer! Here’s a tip we learned the hard way: increasing the volume of food in the oven decreases the air flow. You’ll need longer to cook two baking sheets of oven hash browns versus just one: especially if you want to get them beautifully crispy. Eyeball it and adjust based on your oven.
