One should not throw away the water in which the vegetables have been boiled, to avoid washing away of the essential nutrients .
Secondly , its always better to boil the vegetables whole or in big chunks .. This is to preserve the nutrients again.

I made this several times. It turned out great. I did add garlic at the time of adding tomatoes, green chillies, ginger etc. I add garlic because it reduces cholesterol.
I noticed you are using saunf in Pav-Bhaji. I will need to try this next time.

I wonder why you did not include sautéed onions in the bhaji? I have seen this in other recipe versions
Aunty is Jain.. She doesn’t use onions or garlic in any of her recipes.

Hello Manjula, I just have to say that this is one of my favorite recipes of yours. I am so glad that I had your video to watch because I started wondering “Am I cooking this too long? How cooked should my tomato sauce be before I add the veggies?” I must admit, the delicious smell made me a little impatient to start eating but it was so wonderful. Plus, I have lots of lovely leftovers. I am vegan, so I used coconut oil instead of ghee for the pav and some margarine instead of butter… that worked quite well.

If you read the ingredient list on the paubhaji masala box, it’s almost just like garam masala, saunf, and lemon juice. I made it this way for the first time without using the paubhaji masala and it came out really good. I was not sure, but I just gave a shot.
Also, I sauteed chopped onions in the beginning of the recipe because I do eat them and it came out great.

Nice recipe. I think you should cook the vegetables in a pressure cooker. Vegetables lose their nutrients when you put them in boiling water.
You can cook vegetables without a pressure cooker too in a steamer mesh and lid on the pot. The water level is below the mesh so the vegetables cook by steam.
You can use a pressure cooker so long as the vegetables don’t overcook and get too mushy.
