Soy pineapple sauce

Start with the basic sauce to flavor this dish. A simple combo of pineapple juice, soy sauce, brown sugar, chicken stock and hoisin sauce. Place all the ingredients in a saucepan and bring to a simmer. You’ll also need a little corn flour dissolved in water to thicken the sauce. Simmer this mixture for about 5 minutes or until it turns into a thick syrup.

Let’s make pineapple chicken

While the sauce is simmering, you can start with stir frying chicken. Season chicken strips and stir fry in a little oil for about 4-5 minutes. Once the chicken is browned, add in the veggies (bell peppers and red onions). When they turn crisp tender, stir in the sauce and stir fry for another 3-4 minutes. Finally, pineapple chunks, fresh or canned, goes into the pan. Give this a quick stir fry, and you’re done. Finish off with a generous sprinkle of sesame seeds, toasted cashew nuts, and spring onions. Delicious pineapple chicken to serve with rice or noodles!

Set aside.Pineapple chicken:Heat oil in a large frying pan over medium-high heat. Add chicken. Season with salt and pepper. Stir fry for about 4-5 minutes or until the chicken pieces are browned and cooked through.Add bell peppers (capsicums) and red onions. Stir fry for another 2-3 minutes or until crisp tender. Stir in soy pineapple sauce. Stir fry 3-4 minutes. Add pineapple pieces. Stir fry for another 2 minutes.Garnish with sesame seeds, toasted cashews and spring onions (scallions).
