Raita or yogurt salad is one of my all-time favorite salads. Basically, it’s super simple. But the amazing ability of yogurt to pick up so much flavor from all the ingredients thrown into it makes this salad extra special. This pomegranate raita is an amalgamation of so many different flavors – tangy, spicy, sweet. Utterly superb combo. Now tell me what’s not to like? Sure, making this raita is a no- brainer. You just throw all the ingredients into a bowl, mix it up and there you go. Easy peasy. You have refreshing salad in no time at all. The best part is there’s no cooking involved in this recipe. It’s all about fresh ingredients served fresh. Yogurt and fruit is such a classic combo, so I decided to celebrate it with vibrant, sweet and delicious pomegranates. Honestly, I love the color of pomegranate arils. Just have a look at those red, shiny jewels in the pictures. Don’t they look so pretty? The tangy yogurt definitely adds that creamy texture to this pomegranate raita. The secret here is to use thick yogurt for maximum creaminess. I highly recommend using Greek style yogurt in this recipe which is really thick and adds the right amount of tangy flavor to the dish. However, if it’s not available, thick yogurt is the best choice. Stay away from super sour yogurt as it’ll ruin the entire flavor of the salad. You know, the right balance of all the flavors is key here. The one and only spice used in this raita is ground cumin. It’s one of the essential ingredients of any raita. The spicy touch comes from green chilies. If you’re not a huge fan of chilies, just omit them. And then the coriander (cilantro) leaves. This raita needs that final touch of herbs to reach its maximum flavor potential. That’s it. Fresh pomegranate raita bursting with flavor from all angles. Super simple to make yet so delicious.
