Sasi, when I don’t have amchoor (mango powder), I substitute another sour ingredient, like a little bit of lemon juice. It’s not exactly the same . . . but it helps give a similar “bright” flavor.
. . . I should also add that in this recipe, if you try lemon juice instead of amchoor, you’ll want to be careful not to add too much liquid to the potato mixture–you’ll want it to be dry, so you can stick it to the bread and flip it over without it falling apart.
