Well, that’s the magic of street food beckoning your attention. Like bhel puri, this sev puri is also one of the popular chaat recipes from Mumbai, the street food capital of India. Distinctive and defined with robust flavors. It’s all about crispy crackers or papdis topped with seasonal ingredients and plenty of sev or chickpea noodles. I literally love the two main elements that make this chaat super awesome. Papdis or crackers, and sev or chickpea noodles. Do you remember the baked papdis I made a few weeks ago? Well, I baked another batch of papdis the other day, and started thinking about the best way to enjoy them which in turn led me to this recipe. As a huge fan of sev, store bought packets makes a regular appearance in my shopping basket. The traditional thin nylon sev makes the perfect topping for this chaat recipe. Now the enticing list of toppings for the papdis. The basic idea is to use seasonal ingredients, and customize with your favorite toppings. Mashed potatoes, onions, tomatoes, raw mangoes, pomegranate arils and coriander (cilantro) leaves are just a few ideas to make your delicious plate of sev puri irresistible. Don’t forget a generous sprinkling of ground cumin and chaat masala. Now, the chutneys that make this chaat quite awesome.Sweet date chutney , green chutney and red chutney. While the date chutney imparts a touch of sweetness to the chaat, the red chutney adds a spicy wow factor. The perfect balance of sweet and spicy flavors is what makes this sev puri super awesome. Again, red chutney is totally optional in this recipe. In fact, there’s so much to love about this sev puri. Oh, my taste buds are humming right now.

Prep Time 15 minutes Cook Time 30 minutes Total Time 45 minutes Ingredients Sev puri: 20 papdis or crackers (recipe link just below this recipe) 2 boiled potatoes, mashed 1/2 cup tamarind date chutney (recipe link below this recipe) 1/2 cup green chutney (recipe below) 1/4 cup red chutney (optional) (recipe below) 2 tbsp chat masala 2 tbsp ground cumin (cumin powder) 2 cups sev or crispy chickpea noodles 1 small onion, chopped 1/2 cup chopped coriander (cilantro) leaves 1 cup pomegranate arils, to garnish 1 tomato, chopped, to garnish Coriander (cilantro) leaves, to garnish Green chutney: 1 cup coriander (cilantro) leaves 1 green chili, chopped 1/4 tsp ground cumin (cumin powder) 1/2 tsp chat masala 1/2 tsp chopped fresh ginger 2 tbsp lemon juice Salt to taste Water Red chili chutney: 8 red chilies, seeds removed 2 garlic cloves 1 tsp chopped ginger 2 tsp lemon juice 1/4 tsp ground cumin (cumin powder) Salt to taste Instructions To make green chutney, place all the ingredients in a food processor, and grind to a smooth paste. Set aside.To make red chili chutney, soak the red chilies in water for 30 minutes. Place chilies, garlic, ginger, lemon juice, cumin in a food processor. Season to taste. Grind into a smooth paste.To make sev puri, arrange 5-6 papdis in a single layer in a small plate. Set aside.Season the mashed potatoes with salt, and stir in 2 tbsp coriander (cilantro) leaves. Place a tbsp of potatoes on each papdi. Top with 1 tsp date chutney, 1 tsp red chutney (if you are using), and 1 tsp red green chutney. Sprinkle with chaat masala and ground cumin.Top with onions and 1/2 cup sev or chickpea noodles. Garnish with pomegranate arils. You can also add more chopped onions, tomatoes and coriander (cilantro) leaves.Serve immediately.
