A few weeks ago I returned from the farmer’s market with some gorgeous tart apple varieties, Jonathon and Holiday, begging to be baked. Remembering our friend Melissa and the knock-out biscuits she’d served us on a recent visit, Alex and I thought about combining biscuits and cinnamon-y baked apples for an irresistible dessert treat. That first bite of a new recipe is such a moment of truth, isn’t it? If you’re like me, you stare at the taster intently, blurting out, “What do you think?” before he’s chewed twice. I try to reserve that treatment mainly for Alex, if I can help it! This time, I bided my time, and before I could ask, he announced, “I love it!” Good enough for me, which is why we’re sharing this apple recipe with you today.

The biscuit intentionally has no added sugar; we found it to be a nice contrast to the sweet apples, if a bit non-standard. Using a apple-peeler-corer-slicer would absolutely speed up prep time here! But we peeled and sliced the old fashioned way and it worked just fine.
