And today, I’m super excited to begin the new year with an amazingly easy yet delicious salad that can be converted into a light lunch or dinner with the addition of your favorite protein. Enter this soba noodle salad. The traditional Japanese noodles or soba noodles is considered as a healthier alternative to regular noodles. Made from buckwheat, they are super easy to cook and tastes great too. Start with cooking the noodles according to the directions on package. I cooked them in boiling water for about 3 minutes. It’s important that you rinse cooked noodles in cold water. Keep this aside while you make the dressing. The sesame dressing for this noodle salad is super simple to make. Basically, the noodles are infused with the dressing to create this insanely delicious salad.
Soba noodle salad with sesame dressing
To make the sesame dressing for this soba noodle salad, simply warm sesame oil and red chili flakes over low heat. Let this mixture cool down completely before you add in soy sauce, honey and ginger. Don’t you just love the unique combo of flavors in this dressing? I want to describe it as “out-of-the-world”. Now, the final step of this recipe. Pour the dressing over noodles and give it a good toss. To take it to the next level, add a handful of spring onions (scallions) and a good pinch of sesame seeds. Extra dose of sesame seeds for that beautiful texture. And that’s it. The traditional basic version of this noodle salad is ready. The best part of this recipe is that you can easily convert it into a healthy lunch and dinner. But how? First, you’ll need to choose your favorite protein – tofu, shrimp (prawns), chicken or steak.
