One pot meals and tray bakes – The two most convenient ways to cook dinner on busy weekdays. Do you agree? In the past decade or so, the way we cook everyday meals has undergone a tremendous evolution. Homemade food has become less traditional. Minimal washing up is the norm these days. The proof? Emergence of quick and easy recipes that doesn’t skimp on nutrition and taste. The basic idea of a tray bake is all about cooking one meal for your whole family in a baking tray. That means, the main meal and side dish are prepared in the same tray at the same time. Clever! I know, it’s a little confusing, too. And if you are worried about getting the flavor combinations right, let me walk you through the delicious steps of making the best salmon tray bake ever.  Ok, the salmon. I like to coat the salmon pieces in olive oil before adding the dry spice rub. This will keep the fish extra moist and succulent when cooked. The spice rub for this salmon tray bake is a simple combo of some basic spices like cumin, coriander, cinnamon, and chili powder. I really want to keep the flavors simple. Again, the entire prepping process is done in the baking tray itself, so you don’t end up with a pile of dirty dishes. Now, the side dish – lightly flavored baby broccoli. Just toss them in olive oil, and season with salt and pepper. The broccoli also goes on the tray alongside salmon. So, in the oven, broccoli absorbs all those beautiful flavors from salmon.  While the salmon and broccoli are in the oven, make the dressing or sauce for this delicious salmon tray bake. I’ve opted for a simple yogurt lime sauce made with yogurt, lime juice and grated garlic. The secret ingredient? A little lime zest. It really kicks up the flavor quotient in this yogurt sauce. As you know, I always love the idea of adding more veggies to everyday meals. So, I made a simple beetroot and carrot salad made extra delicious with a touch of freshly grated ginger. Although this salad is totally optional in this recipe, it’s a simple way to boost your veggie intake. Again, canned sliced beetroots is the secret to saving time. If you want to use fresh beets, cook them separately before you slice them and add to the carrots. Super healthy meal idea for your dinner tonight. This salmon tray bake is quick and easy, and incredibly delicious. You’ll love it!

 Yield: 4 Spiced Salmon Tray Bake | Video         			Print		    Salmon and veggies baked together in a tray creating the perfect weeknight meal. The lime yogurt sauce adds that extra special touch.     Prep Time 15 minutes    Cook Time 15 minutes    Total Time 30 minutes      Ingredients Spice rub:   						2 teaspoon ground cumin (cumin powder)					  						2 teaspoon ground coriander (coriander powder)					  						1/2 teaspoon ground cinnamon (cinnamon powder)					  						1 teaspoon Kashmiri red chili powder					  						1 teaspoon lime zest					  						Salt and pepper, to taste					  Salmon tray bake:   						1 bunch baby broccoli					  						4 salmon pieces (approximately 800g)					  						2 tablespoons olive oil					  						Salt and pepper, to taste					  Lime yogurt sauce:   						1 cup yogurt					  						1 teaspoon lime zest					  						1 tablespoon lime juice					  						1/2 teaspoon red chili flakes					  						1 garlic clove, grated					  						1 tablespoon chopped coriander (cilantro) leaves					  						Salt and pepper, to taste					  Beetroot salad: (optional)   						450 g canned beetroot, thinly sliced (approximately 2 cups) (see notes)					  						1 cup carrot, cut into thin sticks					  						1/4 teaspoon grated ginger					  						1/4 cup chopped mint leaves					  						Salt and pepper, to taste					     Instructions Preheat oven to 200C / 400F.Spice rub:Place ground cumin, ground coriander, ground cinnamon, red chili powder and lime zest. Season with salt and pepper. Stir to combine. Set aside.Salmon tray bake:Place broccoli on a baking tray. Add 1 tablespoon olive oil. Season with salt and pepper. Toss to coat. Arrange broccoli in a single layer on one side of the tray.Place salmon skin side down on the other side of the tray. Coat in 1 tablespoon olive oil. Sprinkle spice rub on both sides of salmon. Bake for 12-14 minutes or until cooked through.Lime yogurt sauce:Combine together yogurt, lime zest, lime juice, red chili flakes, grated garlic and chopped coriander (cilantro) leaves in a bowl. Season with salt and pepper.Beetroot salad:Place beetroot, carrot, chopped mint leaves and grated ginger in a bowl. Season with salt and pepper.Serve salmon with beetroot salad and lime yogurt sauce.   Notes  - If you don’t like canned beetroots, cook whole beets and then slice them thinly.
