Those stylized photographs of quinoa bowls and waffle stacks and bright-white clean kitchens are an idealized version of reality. These images can present a myth of perfection. But of course behind each of them are real people, people with cracks and blemishes and insecurities. People who are simply seeking to capture beauty among the imperfectness of this life. I know from experience, behind each gorgeous image are at least 127 terrible ones of the same shot. And I’m certain the lives of the people behind the images are littered with imperfections too, just like mine! We’re all human. And we’ve all gotta eat! So here’s a simple weeknight recipe for those times when you have energy for nothing more than picking up some simple ingredients from the store. It’s our Thai curry pizza with naan bread, and it’s darn good too.
How to make curry pizza
So, what’s curry pizza anyway? In this recipe we tried something completely different than the typical way to eat naan and curry. Asian-style pizza isn’t common, but we decided to try something out of the box with this curry pizza recipe. We found that the combination of Thai curry paste mixed with canned tomatoes makes for an ultra delicious pizza sauce! To bring in the Thai curry vibe to the toppings, over the mozzarella cheese we added cashews, thinly sliced green onions and cilantro. The toppings are very simple, but the flavor that’s achieved is unique and intense! We’re all about fusion recipes like Greek Quesadillas, Mexican Pizza, and Mexican Lasagna, so the fusion of Thai curry and pizza was right up our alley.
Naan pizza ideas
Making naan pizza is one of our favorite ways to make a fast and easy dinner recipe. When we make naan pizza, we pre-bake the naan to make a lightly crispy crust. Then we add the toppings and bake for another few minutes until the cheese is melted. That’s it! It’s so simple and such and easy way to make a weeknight meal. One pizza per person works well if served with a large salad; if cooking for big appetites you may want to plan for 1 ½ to 2 per serving. Looking for naan pizza ideas?
